Abstract
ABSTRAK Pengaruh Ukuran Partikel Bioadsorben Akar Alang-Alang (Imperata cylindrica L) terhadap Kualitas Minyak Jelantah Minyak jelantah adalah minyak goreng yang sudah digunakan beberapa kali pemakaian. Selain warnanya yang tidak menarik dan berbau tengik, minyak jelantah juga mempunyai potensi gangguan terhadap kesehatan tubuh. Minyak jelantah memiliki kualitas yang tidak memenuhi syarat Standar Nasional Indonesia (SNI) 7709:2019 sehingga tidak dapat lagi digunakan untuk mengolah bahan makanan. Penelitian ini dilakukan proses adsorpsi menggunakan bioadsorben akar alang-alang (Imperata cylindrica L) untuk mengadsorpsi senyawa-senyawa yang menyebabkan penurunan kualitas minyak yang mempengaruhi nilai asam lemak bebas, peroksida, kadar air, dan cemaran logam Pb. Bioadsorben digunakan dalam 3 variasi ukuran mesh 60, 80, dan 100 sebanyak 10% dan diadsorpsi selama 60 menit. Hasil penelitian menunjukkan minyak jelantah setelah adsorspi dapat meningkatkan kualitas minyak jelantah. Tetapi, pada uji asam lemak bebas dan kadar air minyak belum memenuhi syarat mutu Standar Nasional Indonesia (SNI) sedangkan pada uji bilangan peroksida dengan variasi ukuran mesh 100 telah memenuhi syarat tersebut yaitu 8 mEq O2/kg dan pada uji cemaran logam timbal Pb dengan variasi ukuran partikel mesh 60 dan mesh 80 telah memenuhi syarat mutu Standar Nasional Indonesia (SNI) dengan kadar Pb yaitu ≤0,01 mg/L. Dengan demikian, minyak jelantah setelah adsorpsi menggunakan bioadsorben akar alang-alang tidak memenuhi standar minyak goreng layak pakai menurut Standar Nasional Indonesia (SNI) 7709:2019. Kata kunci : Akar alang-alang, Bioadsorben, Minyak jelantah ABSTRACT The Effect of Particle Size of Reed’s Root (Imperata cylindrica L) Bioadsorbent on the Quality of Used Cooking Oil Used cooking oil is cooking oil that has been used several times. In addition to its unattractive color and rancid smell, used cooking oil also has the potential to cause health problems. Used cooking oil has a quality that does not meet the requirements of the Indonesian National Standard (SNI) 7709:2019 so it cannot be used to process food ingredients. This research was carried out using an adsorption process using reed’s root bioadsorbent (Imperata cylindrica L) to adsorb compounds that cause a decrease in oil quality which affects the value of free fatty acids, peroxides, water content, metal contamination of Pb. Bioadsorbent used in 3 variations of mesh size 60,80, and 100 as much as 10% and adsorbed 60 minutes. The results showed that used cooking oil after adsorption could improve the quality of used cooking oil. However, the free fatty acid test and the oil moisture content did not meet the quality requirements of the Indonesian National Standard (SNI) while the peroxide number test with a mesh size variation of 100 met the requirements, namely 8 mEq O2/kg and in the lead Pb contamination test with variations The particle sizes of mesh 60 and mesh 80 have met the quality requirements of the Indonesian National Standard (SNI) with a Pb content of 0.01 mg/L. Thus, the used cooking oil after adsorption using reed’s root bioadsorbent did not meet the standard for edible cooking oil according to the Indonesian National Standard (SNI) 7709:2019.
