Abstract

Abstrak Aktivitas Antibakteri Kombucha Bunga Telang (Clitoria ternatea) Terhadap Bakteri Escherichia coli Iin Novianti, Rochmanah Suhartati, Ummy Mardiana (Program Studi D-III Analis Kesehatan/TLM, Universitas Bakti Tunas Husada Tasikmalaya) Abstrak Kombucha merupakan minuman probiotik dibuat dengan memfermentasikan teh dan gula yang dibantu oleh SCOBY (Symbiosis of Bactery and Yeast) terdiri dari bakteri dan jamur yang memiliki banyak manfaat. Penelitian ini bertujuan untuk mengetahui apakah menambahkan air rebusan bunga telang ke kombucha dapat menghambat pertumbuhan bakteri Escherichia coli. Metode yang digunakan bersifat eksperimen serta Kirby-bauer digunakan sebagai uji aktivitas antibakteri. Hasil penelitian menunjukan adanya daya hambat pada air rebusan bunga telang terhadap bakteri Escherichia coli dengan diameter 7.38 mm. Pada formulasi A sebesar 6.63 mm, formulasi B 6.08 mm, formulasi C 6.01 mm, formulasi D 5.95 mm, dan formulasi E 6.61 mm. Sedangkan hasil uji kesukaan panelis terdapat pada formulasi C dihasilkan warna ungu dengan nilai tertinggi sebesar 23%. Kontrol positif menggunakan antibiotik kloramfenikol, sedangkan kontrol negatif menggunakan blank disk. Penelitian dapat disimpulkan bahwa aktivitas antibakteri kombucha bunga telang dapat menghambat bakteri Escherichia coli dengan zona hambat paling tinggi terdapat pada air rebusan bunga telang dan formulasi A. Kata kunci: Kombucha, Bunga telang, Aktivitas Antibakteri, Uji kesukaan, Escherichia coli Antibacterial Activity Of Butterfly Pea Flower Kombucha (Clitoria Ternatea) Against Escherichia coli Bacteria Abstract Kombucha is a probiotic drink made by fermenting tea and sugar assisted by SCOBY (Symbiosis of Bactery and Yeast) consisting of bacteria and fungi that have many benefits. This study aims to find out whether adding telang flower decoction water to kombucha can inhibit the growth of Escherichia coli bacteria. The method used is experimental and Kirby-bauer is used as an antibacterial activity test. The results of the study showed that there was an inhibitory effect on the boiled water of telang flowers against Escherichia coli bacteria with a diameter of 7.38 mm. In formulation A is 6.63 mm, formulation B is 6.08 mm, formulation C is 6.01 mm, formulation D is 5.95 mm, and formulation E is 6.61 mm. Meanwhile, the results of the panelists' preference test in formulation C produced purple with the highest score of 23%. The positive control used the antibiotic chloramphenicol, while the negative control used a blank disk. The study can conclude that the antibacterial activity of kombucha of telang flower can inhibit Escherichia coli bacteria with the highest inhibition zone found in the decoction water of telang flower and formulation A.
