Abstract

ABSTRAK Uji Kualitas Mikrobiologi Es Batu Di Daerah Jalan Cilolohan Dengan Metode Membran Filter Microbiological Quality Test of Ice Cube in Cilolohan Road Area with Membrane Filter Method Ikbal Komarudin (Program Studi D-III Analis Kesehatan/TLM, Universitas Bakti Tunas Husada Tasikmalaya) Abstrak Es batu adalah bahan pelengkap makanan yang dibuat dari air dan digunakan sebagai pelengkap minuman. Karena Escherichia coli adalah flora usus yang biasa keluar dari tinja dan dapat menyebabkan infeksi pada makanan dan minuman, tidak adanya kuman Coliform dan Escherichia coli dianggap sebagai kriteria sanitasi dan kehigienisan yang baik dari minuman dan makanan. Penelitian deskriptif dilakukan pada sampel es batu menggunakan metode Membran filter. Tujuan dari penelitian ini adalah untuk mengevaluasi kualitas bakteriologis es batu yang digunakan oleh penjual jus yang ada di sekitar jalan Cilolohan. Hasil penelitian menunjukkan bahwa ketiga sampel es batu yang digunakan penjual jus (100%) tidak memenuhi standar kesehatan karena mengandung bakteri Coliform dan Escherichia coli. Dari hasil penelitian ini, dapat disimpulkan bahwa es batu yang bersih dan higienis yang digunakan penjual di daerah sekitar jalan Cilolohan terkontaminasi bakteri Coliform dan Escherichia coli dan tidak memenuhi standar kualitas air yang ditetapkan oleh PerMenKes RI No 2 Tahun 2023. Kata Kunci: Coliform, Escherichia coli, Es Batu Abstract Ice cubes are food additives made from water and used as a beverage accompaniment. Since Escherichia coli is a common intestinal flora that comes out of feces and can cause infections in food and beverages, the absence of Coliform germs and Escherichia coli is considered a criterion for good sanitation and hygiene of beverages and food. Descriptive research was conducted on ice cube samples using the Membrane filter method. The purpose of this study was to evaluate the bacteriological quality of ice cubes used by juice sellers around Cilolohan street. The results showed that all three ice cube samples used by juice sellers (100%) did not meet health standards because they contained Coliform and Escherichia coli bacteria. From the results of this study, it can be concluded that clean and hygienic ice cubes used by sellers in the area around Cilolohan street are contaminated with Coliform and Escherichia coli bacteria and do not meet the water quality standards set by PerMenKes RI No 2 Year 2023.
