Abstract

ABSTRAK Cemaran logam berat timbal (Pb) pada pangan merupakan isu penting karena bersifat non-degradable, mudah terakumulasi dalam jaringan organisme hidup, dan berpotensi menimbulkan efek kronis terhadap kesehatan. Timbal dapat masuk ke dalam pangan melalui kontaminasi lingkungan, penggunaan bahan kimia pertanian, serta proses pengolahan dan pengemasan. Studi literatur ini bertujuan untuk memperoleh metode analisis Pb dengan nilai LoD-LoQ terkecil serta untuk mengetahui gambaran kadar cemaran dalam Pb. Metode dilakukan secara deskriptif terhadap 12 artikel ilmiah yang dipublikasikan pada tahun 2020-2025 dengan menelaah nilai LoD-LoQ untuk menentukan metode analisis dengan sensitivitas dan selektivitas terbaik serta untuk mengetahui gambaran kadar cemaran dalam Pb. Hasil studi menunjukkan bahwa metode ICP-MS memiliki nilai LoD-LoQ paling rendah yaitu LoD pada rentang 6,783×10⁻⁶- 1,5922×10⁻⁵ ppm dan LoQ pada rentang 2,0556×10⁻⁵- 4,8284×10⁻⁵ ppm. Kadar Pb tertinggi dilaporkan pada terong ungu (3,50-3,96 mg/kg). Kata kunci : Timbal, Pangan, Cemaran, Metode analisis, Studi literatur ABSTRACT Heavy metal contamination by lead (Pb) in food is an important issue because it is nondegradable, easily accumulates in the tissues of living organisms, and has the potential to cause chronic health effects. Lead can enter food through environmental contamination, the use of agricultural chemicals, and food processing and packaging. This literature study aims to identify an analytical method for Pb with the lowest LoD-LoQ values and to describe Pb contamination levels in food. The study was conducted descriptively by reviewing 12 scientific articles published between 2020 and 2025. The LoD-LoQ values were analyzed to determine the analytical method with the best sensitivity and selectivity and to describe Pb contamination levels. The results show that the ICP-MS method has the lowest LoD-LoQ values. The LoD ranged from 6.783 × 10⁻⁶ to 1.5922 × 10⁻⁵ ppm, while the LoQ ranged from 2.0556 × 10⁻⁵ to 4.8284 × 10⁻⁵ ppm. The highest Pb levels were reported in purple eggplant at 3.50–3.96 mg/kg. Keywords : Lead, food, contamination, analytical methods, literature review
