Abstract

ABSTRAK Bunga Rosella (Hibiscus sabdariffa) merupakan spesies rosela herbal yang memiliki potensi sebagai sumber bahan pangan fungsional, antioksidan, antibakteri, zat pewarna alami serta pemanfaatan dalam bidang kesehatan dan antosianin yang baik. Tujuan dari penelitian ini untuk mengetahui gambaran pengaruh penyimpanan terhadap senyawa aktif dari ekstrak alkohol bunga rosella dan untuk mengetahui variasi wadah mana yang paling stabil terhadap pengaruh lamanya penyimpanan. Metode yang digunakan dalam penelitian ini adalah ekperimental yang digunakan untuk mengetahui pengaruh perlakuan penyimpanan senyawa aktif esktrak. Hasil penelitian menunjukkan adanya senyawa flavonoid, dan tanin. Berdasarkan pengaruh variasi penyimpanan yang paling stabil yaitu pada botol bening yang dilapisi alumunium foil karena terjadi presentase penurunan absorbansi relative lebih stabil. Kata kunci : Bunga Rosella (Hibiscus sabdariffa), Ekstrak alkohol, Senyawa Aktif ABSTRACT Roselle flower (Hibiscus sabdariffa) is a species of herbal roselle that has potential as a source of functional food ingredients, antioxidants, antibacterials, natural dyes as well as good health and anthocyanin uses. The purpose of this study was to describe the effect of storage on active compounds from the alcoholic extract of roselle flowers and to determine which variations of the container were the most stable against the effect of storage time. The method used in this research is experimental which is used to determine the effect of the storage treatment of the extract active compound. The results showed the presence of flavonoids and tannins. Based on the influence of the storage variation, the most stable is in clear bottles coated with aluminum foil because there is a decrease in absorbance that is relatively more stable.
