Abstract
Abstrak Kesadaran masyarakat akan kesehatan mulut dan tenggorokan telah berkurang. Daun ciplukan (Physalis angulata L.) telah diketahui memiliki aktivitas antimikroba yang cukup signifikan. Penelitian ini bertujuan untuk memformulasikan daun ciplukan sebagai edible film dan mengevaluasi karakteristik serta aktivitas antibakterinya. Daun ciplukan diekstraksi dengan metode maserasi menggunakan etanol 96% dan diformulasikan menjadi edible film. Evaluasi sediaan yang dilakukan berupa uji organoleptik, pH, ketebalan, waktu hancur, waktu melarut, kadar air, serta aktivitas antibakteri terhadap S.pyogenes dan S.mutans. Hasil penelitian menunjukkan bahwa formula terbaik yaitu FIII dengan konsentrasi ekstrak 6%, dengan hasil uji organoleptik bentuk persegi panjang, warna kuning gelap, rasa pahit dan aroma khas ekstrak, uji ketebalan 0,09, pH 6,20, waktu hancur 14 detik dan waktu melarut 39 detik, nilai kadar air 11,12%, serta uji aktivitas antibakteri sediaan edible film sebesar 10,85 ± 0,35mm terhadap S.pyogenes dan 10,65 ± 0,21mm untuk S.mutans keduanya sama-sama menghasilkan kategori kuat. Kata kunci : Daun ciplukan (Physalis angulata L.), S. mutans, S. pyogenes. Abstract Public awareness of oral and throat health has decreased. Ciplukan leaves (Physalis angulata L.) are known to have significant antimicrobial activity. This research aims to formulate ciplukan leaves as edible film and evaluate its characteristics and antibacterial activity. Ciplukan leaves are extracted using the maceration method using 96% ethanol and formulated into edible film. The preparation evaluation was carried out in the form of organoleptic tests, pH, thickness, disintegration time, dissolution time, water content, and antibacterial activity against S.pyogenes and S.mutans. The research results showed that the best formula was FIII with an extract concentration of 6%, with organoleptic test results of rectangular shape, dark yellow color, bitter taste and distinctive aroma of the extract, thickness test of 0.09, pH 6.20, disintegration time of 14 seconds and dissolved in 39 seconds, the water content value was 11.12%, and the antibacterial activity test of the edible film preparation was 10.85 ± 0,35mm against S.pyogenes and 10.65 ± 0,21 mm for S.mutans, both of which resulted in a strong category.
